Chef Val Morrison's food distracts visitors from the view at Emerald Lake Lodge, one of the most idyllic and gorgeous settings in the Rockies. Her food is lush, creative, and satisfyingly beautiful. Seafood in Jasper, deep in the Rockies? Fiddle River owner Patrice Fortin knows his chowder from his flounder and serves amazingly fresh and well-prepared seafood dishes. (He has elk and bison too.)

Banff is the focus of our second episode as John visits Buffalo Mountain Lodge on Tunnel Mountain. He joins chef Lancelot Montero for a lesson on braising elk and then moves on to the iconic Banff Springs Hotel. There, after strolling the storied halls, he heads to the Waldhaus Restaurant, where he enjoys a perfect schnitzel and discusses the history of the Castle on the Bow with Chef Robert Ash.

Chef Jason Munn of Syrah's of Jasper can't take his caramelized onion tart and elk Wellington off his menu for fear of customer reprisals. His mountain bistro is that popular with locals and visitors alike. In Camore, Tracy Little forages for berries, pine buds, crab apples and even insects for her outlandishly creative dishes. Like her ants on a log, featuring foraged ants and chocolate.
